Curry Crab- ກະປູກະຫລີ່

Curry crab is delicious and so easy to make. I usually serve this on special occasions because let’s face it, crab ain’t cheap!

Where to buy king crab

I usually buy king crab legs from Costco because they’re huge and so meaty! Another good thing is that they’re already cooked. You could use a fresh whole dungeness crab if you wanted to.

I have to say, nothing is better than fresh seafood, but I do dread the part where you have to kill it and then clean it. If you choose to use fresh crab, boil it for about 15 minutes after it’s been cleaned and chopped into pieces.

To cut the king crab legs into smaller pieces, I highly recommend that you invest in a pair of special scissors for crab. It makes life so much easier.

The next step is to mix the sauce. In a small bowl, whisk together the eggs, oyster sauce, red curry paste, sugar, salt, and coconut milk.

Slice the red onions and chop the green onions.

The Stir Fry Process

On medium high heat, add 3 tbsp of vegetable oil into the wok. When the oil gets hot, sauté the red onions with the yellow curry powder. Add the sauce mixture and stir until it thickens.

Next, add the crab pieces, and stir fry until the sauce coats the crab evenly. Turn down the heat to medium and cover with a lid. Let the sauce simmer for about 3-5 minutes until the crab is heated through.

Garnish with chopped green onions and serve with jasmine rice.

Curry Crab will definitely impress your friends at your next dinner party! They will think you worked really hard, but the truth is it’s really quite simple.

Stir fry king crab legs in a curry sauce.

Ingredients
  • 2 King crab legs cooked and chopped
  • 1 small red onion sliced
  • 3 tbsp yellow curry powder
  • 3 tbsp vegetable oil
  • green onions chopped for garnish
Curry Sauce Mixture
  • 2 eggs
  • 2 tbsp red curry paste
  • 8.5 oz coconut milk Aroy-D brand in paper carton.
  • 2 tbsp oyster sauce
  • 2 tsp sugar
  • 1 tsp salt
Instructions
  1. Heat oil in wok on medium heat. Add the red onions and yellow curry powder. Sauté until fragrant.

  2. Add the curry sauce mixture. Stir until thickened

  3. Add the king crab legs, stir fry until sauce completely coats the crab legs.

    Cover with lid and simmer for 3-5 minutes until crab is heated through.

  4. Garnish with chopped green onions. Serve with jasmine rice.
