Khao Nom Kok – Coconut Rice Cakes ເຂົ້າຫນົມຄົກ

Khao Nom Kok

Khao Nom Kok is a popular street food dessert in Laos and Thailand (Kanom Krok). These bite sized desserts are sweet coconut semi sphere cakes that will melt in your mouth. A little crispy on the outside and smooth on the inside.

What Are They Made Of?

Khao Nom Kok is made out of rice flour, tapioca starch, coconut milk, sugar, salt and oil. Simple ingredients that are whisked together to make a smooth batter.

Toppings

The most classic topping is chopped green onions. You can also use cooked sweet corn kernels, taro cubes and kabochi cubes. You can experiment and try any topping you like.

What Kind of Pan Do You Need?

I prefer to use an electric pan. You can find them on amazon as yakoyaki or aebleskiver pans. I find that it cooks evenly and the non stick surface makes it easy to remove the cakes. They are traditionally cooked in a cast iron pan, but I find that the batter tends to stick to the pan.

How to Make Khao Nom Kok

Heat the pan to 350°F. Brush the pan holes with a little vegetable or coconut oil.

I like to use a measuring cup instead of using a ladle. It makes it so much easier to pour the batter into each pan hole. Leave a little room at the top for them to rise a little bit and put the toppings. Once the batter starts to set, add your toppings.

These cakes take about 4-5 minutes to cook. Once the batter is no longer runny, then they are cooked. Remove them from the pan and put them together to form a ball. Enjoy them when they are hot and fresh off the pan!
