Lao Shrimp Salad Wonton Cups

I made these tasty Lao Shrimp Salad Wonton Cups for my friend’s dinner party. It’s super easy to make and was a huge hit at the party.

I wanted to create something that was elegant, easy to eat and serve. I thought why not put Lao shrimp salad in a wonton cup! What’s more elegant than shrimp and what’s easier to eat than food in a wonton cup?

To make the wonton cups, all you need is a package of wonton wrappers, muffin tin and cooking spray. First preheat the oven to 325°F.

Next, spray the muffin tin with cooking spray to prevent the wonton wrappers from sticking to the pan. Carefully press each wonton wrapper into the muffin tin.

Pop them in the oven for 8-10 minutes or until they are nice and golden brown and that’s it!

Let them cool while you make the salad.

The shrimp salad has the same dressing as my Yum Talay – seafood salad. Since this is served in tiny wonton cups, I switched the seafood to mini shrimps. You can buy these already cooked with the shell and tail off. I also cut the vegetables into smaller pieces.

Toss the shrimp and vegetables with the dressing and then garnish with chopped cilantro. Try not to fill the cups with too much dressing, otherwise the wonton cups will start to break down.

You can make the salad and the wonton cups ahead of time for your next party. Enjoy!

Ingredients
  • 1 packet wonton wrappers
  • cooking spray
  • 1 lb mini shrimp cooked, peeled and tail off
  • 1 red bell pepper finely chopped
  • 2 shallots finely chopped
  • 4 thai chili finely chopped
  • 1 C cilantro finely chopped
Salad Dressing
  • 1/4 Cup tamarind pulp
  • 5 tbsp sugar
  • 2 tbsp chili paste with soya bean oil
  • 1/4 Cup fish sauce
  • 1/4 Cup lime juice
Instructions
Wonton Cups
  1. Preheat oven to 325°

  2. Spray muffin tin with cooking spray

  3. Gently press each wonton wrapper into the muffin tin

  4. Bake for 8-10 minutes or until golden brown.

Lao Shrimp Salad
  1. Dice all the vegetables.

  2. Combine all the ingredients for the salad dressing.

  3. Combine the salad dressing with the cooked shrimp and diced vegetables.

  4. Fill each wonton cup with the shrimp salad and garnish with chopped cilantro. Serve immediately.
