Pa Piew Waan - Sweet and Sour Fish

Pa Piew Waan is fried fish with a sweet and sour sauce. The sauce is made from tomatoes and pineapple

Ingredients

  • 1 whole Tilapia
  • 2 eggs scrambled
  • 1 C all purpose flour
  • 4 C vegetable oil for frying
  • 1 red bell pepper
  • 1/2 C pineapple chopped
  • 1 roma tomato
  • 2 yellow onion
  • 1 T salt
  • 1 C chinese celery chopped on an angle
  • 3 cloves garlic chopped finely
  • 1 t cornstarch mixed with 1T water

Sweet and Sour Sauce

  • 1 T fish sauce
  • 2 T oyster sauce
  • 2 T sugar
  • 1 T thin soy sauce
  • 1/2 C ketchup
  • 1/4 tsp pepper

Instructions

Frying Fish

  1. Heat the oil in a fry pan or wok on medium.

  2. Clean the fish and pat it dry with a paper towel. Make diagonal slits on both sides of the fish.

  3. Season with salt and pepper. Dip the fish in egg.

  4. Followed by the flour. Shake off any excess flour.

  5. Fry the fish until golden brown. Flipping the fish once during frying.

  6. Set the fish aside on a paper towel to remove excess oil.

Sweet and Sour Sauce

  1. Chop the bell pepper, onion, tomatoes, pineapple and celery into square bite size pieces. Finely chop the garlic.

  2. Sautee the garlic until golden.t

  3. Add the bell pepper, onions, tomatoes, pineapple and celery.

  4. Add the sauce and stir fry until the vegetables are cooked.

  5. Place the fish on a platter and top it with the sweet and sour sauce. Serve with jasmine rice.
